Do you know of an application that would let me control my third-generation iPod touch from my iPhone 4S, or vice versa?

A VNC server-style application is currently not possible with the restrictions that Apple has in place for App Store developers—you can control a Mac from an iOS device, but you can't control another iOS device. However, if you jailbreak those handhelds, you can download the free Veency application from Cydia.

Veency is a VNC server for your iOS device.

This application will install a VNC server on your iOS device, which can be accessed through any VNC client on another iOS device, or your computer. You can find more information about Veency including a nifty demonstration video.
